Waited for a food parcel from my wife, but due to a massive amount of delivery, mine was postponed until tomorrow. No food to have, I made risotto myself. I used barley instead of rice. Even though the grain takes typically a long time to cook, I chose it so as not to take the risk of higher glucose.
I made the risotto with butter, garlic, parsley, scallion and chicken stock.
